Abstract

In recent years, global megatrends such as globalization, increasing global food demands worldwide, climate change, an older population, urbanization, and geopolitical instability have adversely affected food safety, contributing to the appearing of more unsafe food in many areas, including Türkiye. Hazard Analysis and Critical Control Points (HACCP) is a widely used process management system helps to guarantee the production of safe food by detecting and controlling potential risks during production. The main aim of this study is to explore the research areas, scientific advancements, and innovative developments in HACCP and food safety, while addressing gaps in current literature. In this context, we utilized a bibliometric approach to analyse academic articles about food safety and HACCP through co-authorship analysis, keyword co-occurrence analysis, and citation analysis. For the analysis, VOSviewer version 1.6.20 software was used, while the Analyse Results section of the Web of Science (WoS) database was employed for the descriptive content analysis. The findings find out a relative rise in academic papers over time, and the most cited works are mainly review articles. The research has mainly focused on biological risks in food and HACCP-related issues. While the top-producing institutions are mainly European universities and U.S. government agencies, the degree of collaboration among authors was found to be low. The United States and the United Kingdom are the most productive countries in the field. Internationally recognized journals with high scientific impact factors are particularly prominent in the field of food safety and microbiology. The findings of this study may guide decision-making and collaborative works by researchers, policymakers, governments, industry leaders, and public authorities, leading to the establishment of effective and sustainable food safety in the future.
