Effect of Different Extraction Types on Physicochemical Properties of Sumac (Rhus Coriaria L.) Oil

In this study, a rapid and environmentally friendly ultrasound-assisted extraction method was investigated as an efficient alternative to the conventional soxhlet extraction using n-hexane for obtaining sumac oil. This study aimed to evaluate the fatty acid profile, DPPH-Radical scavenging activity, total phenolic, α-tocopherol and free fatty acid (FFA) content and refractive index of sumac oil samples which were obtained by soxhlet extraction and ultrasound assisted extraction. It was determined that the major fatty acids of sumac oil produced by soxhlet extraction were oleic acid (52.97%), linoleic acid (14.10%) and palmitic acid (29.00%). It was also stated that the major fatty acids of sumac oil by ultrasound assisted extraction were oleic acid (50.06%), linoleic acid (19.27%) and palmitic acid (26.86%). Total phenolic content (TPC) was determined as 0.834 mg GAE/g oil in sumac oil produced by the ultrasound extraction, and 1.035 mg GAE/g oil in sumac oil produced by the soxhlet extraction. DPPH-Radical scavenging activity was found to be 89.84% in sumac oil produced by ultrasound extraction and 88.76% in sumac oil produced by soxhlet extraction. The amounts of α-tocopherol were determined as 216 mg/kg oil in sumac oil produced by the ultrasound extraction and 300 mg/kg oil in sumac oil produced by the soxhlet extraction.
