Sustainable Packaging Approach: Production of Edible Film from Cold-Pressed Flaxseed Oil Waste and Its Application a Coating on Persimmon Fruit

Abstract

The aim of this study is to develop a postbiotic-enriched edible coating using flaxseed gum (FG) obtained from cold-pressed flaxseed oil by-products and to investigate its potential as a bioactive coating material for dried persimmon fruit. The edible coating was prepared by incorporating postbiotics derived from a Lactiplantibacillus plantarum culture into the FG matrix and applied as a coating on persimmon fruits. Its effects on microbiological stability and antioxidant properties were evaluated during 28 days of cold storage. The postbiotic-enriched coating significantly inhibited microbial growth (P<0,05), resulting in lower counts of total mesophilic aerobic bacteria (TMAB) and yeast-mold (TMK) compared to the control and standard FG coating groups. In addition, the coated fruits exhibited higher total phenolic content (TPC, 127,58±3,89 mg GAE/100 g DM) and antioxidant capacity (TAC, 311,52±13,78 mg TE/100 g DM). All sample groups showed similar total flavonoid content (TFC) (P>0,05). These findings suggest that postbiotic-enriched flaxseed gum coatings can serve as effective, natural, and biodegradable coating materials, supporting both food preservation and by-product valorization studies.
