Abstract

Today, due to population growth and socio-economic developments, the demand for access to quality food is increasing. This situation has led to difficulties in the supply of animal-based food and problems in production conditions. Increasing the production capacity of broiler chickens has brought environmental and genetically-related welfare issues to the forefront. Transportation processes are a significant source of stress in poultry farming and are directly related to animal welfare levels. Transport conditions cause physiological, biochemical, and hormonal changes in animals, leading to a decline in meat quality and yield. They also cause economic losses for businesses. Therefore, it is important to assess the welfare levels of animals during transport. In this study, the mortality rates of chickens arriving at the slaughterhouse at specific time intervals were statistically evaluated. The data were divided into four different time periods, and the total number of chickens arriving at the slaughterhouse and the number of dead chickens were recorded for each time period. The highest mortality rate was observed between 24:00 and 06:00 (0.273%). The average transport-related mortality rate of chickens was determined as 0.26 ± 0.07%. Bruise prevalence was 11.9 ± 1.5% in wings, 12.6 ± 2.01% in drumsticks, and 2.86 ± 0.98% in breast regions. Statistical analysis indicated that mortality rates differed significantly across time periods (p<0.05). When bruise rates were evaluated regionally, it was observed that rot was most prevalent in drumsticks and that the existing traumas were highly related to transport. According to the results of the study, ensuring good transport conditions and paying more attention to the catching and slaughtering process play an important role in reducing the percentage of chicks that die upon arrival.
