The S-Europ System in Classification the Quality of Cattle Carcasses and Monitoring Methods in Carcass Grading

To gain the certain information which will give the carcass classification according to the quality and efficiency only can be possible after the slaughter and post-slaughter measurements. Subjective evaluations before slaughter and post-slaughter can only be a prediction and an estimation. Naturally this situation requires a classification system, monitoring system, measurement system, qualified and scientific labour power. The lack of carcass classification system brings a lot of problems not only from the point of important economical loses but also taste, lack of target nutrition and pricing. In this review; Turkey‘s cattle carcasses classifications and grading‘s related to the current situation, the European Union countries in the beef carcass classification and grading in order to use the “S-EUROPE” system for informing and carcass conformation, fatness condition and the imaging methods used for determining carcass composition Ultrasound, Computed Tomography (CT), Magnetic Resonance (MR), X-Ray Absorptiometry, Optical Probes and Video Imaging Analysis (VIA) are aimed to give information about above cases.Downloads
