Investigation of the Kinetics of Ultrasound Pre-treatment Drying of Seeded and Seedless Pomegranate Arils Using Thin Layer Models Containing at Most Two Parameters

In this study, seeded and seedless pomegranate arils (Punica granatum L.) were dried at 70 °C at an air velocity of 1,3 m/s after ultrasonic pre-treatment (US) for different durations in thin layers. To investigate the drying kinetics of pomegranate arils, two-parameter models were mostly used instead of multi-parameter models, which are widely used in the literature but are complex and require data transformation. These models are the Lewis (Newton), Page, Modified Page I, Weibull, Weibull I, and Modified Two Term III models. RMSE (Root mean square error) and coefficient of determination (R2) values were used to select the model that best explained the drying processes. According to the results, the Page model best explained the drying of seeded pomegranate arils under all process conditions. In seedless pomegranate arils, the Page model was found to be the best model to explain the drying of pomegranate arils without pre-treatment and with the 10-min of US pre-treatment, and the Weibull model was found to be the best model to explain the drying of pomegranate arils with the 20 and 30 min of US pre-treatment. However, US pre-treatments of different durations applied before drying significantly reduced the drying time of seeded and seedless pomegranate arils.
