Abstract

Being a rich source of protein, sesame is one of the first plants cultivated for oil production and has been cultivated in many countries of the world since prehistoric times. Sesame seeds contain high levels of unsaturated fatty acids (80% on average), as well as antioxidants such as sesamol and sesamolin, which have important benefits for human health. In addition, its seeds are an important source of Ca, Mg and Se. In recent years, studies have shown that sesame seeds and oil, in addition to being a high energy source for human nutrition, also delay the effects have of anti-aging, anticarcinogenic, antiinflammatory, antifungal, antimicrobial effects, accelerate alcohol decomposition in the liver, have antihypertensive activity and immune regulatory activities. In particular, it has been determined as a result of studies that black sesame prevents hair whitening. It is also known that different parts of the sesame plant have been used for many years, especially in the treatment of diseases such as dysentery.
