Abstract

Additives are defined as substances added to food to maintain and improve safety, freshness, taste, texture or appearance. The use of additives does not pose a danger to consumers, provided that they comply with legal regulations and are used at the determined concentration. But concerns about food additives have increased over the past 20 years. In recent years, more and more studies on chemicals used as food additives show their negative effects on health. In fact, toxicity tests must be developed to better define health problems, and large and lengthy studies are needed to examine lifetime exposure. In this study, the effects of food additives on human health are examined in the light of recent developments.
